In season in Germany right now
- Cut the sweet potatoes into strips.
- Put the strips into a large bowl of water and leave them for at least 1 hour. The longer, the better (e.g. overnight).
- Then drain the water and dry the strips with a kitchen towel.
- Spread the sweet potato strips on a baking sheet.
- Bake at 480 °F / 250 °C convection for 25 minutes. Turn the fries after 15 min.
- Finally, salt the fries in a large bowl.
Tips
Tips for extra crispy fries:
- Soaking draws some of the starch out of the sweet potato, so the inside doesn't cook too quickly.
- After soaking, sprinkle with baking powder.
- Don't let the sweet potato strips overlap in the oven, and turn them now and then.
- Open the oven door every now and then while baking to let the steam escape.
- Only salt them after baking.
- Serve the sweet potato fries in a large bowl so any remaining moisture can escape.
