Prepare the ingredients:
- Halve the tomatoes.
- Slice the scallions into thin rings.
- Pick the basil leaves.
- Line a greased dish (or one lined with parchment paper) with the quiche pastry.
- Spread the filling over it.
- Top with the tomatoes, cut side up.
- Bake at 350 °F / 180 °C (conventional, top and bottom heat) for 35 min.
- Then let it cool for 10 min.
- Toast the pine nuts in a dry pan.

Kala namak:
- Kala namak is a salt with a sulfurous taste. It's reminiscent of the typical taste of egg and is often used in vegan cooking. You'll rarely find it in the supermarket, but it's easy to get online.
