  • Cut all the ingredients into small cubes.

Draw out the moisture:

  • Wrap the tofu in a kitchen towel and weigh it down.
  • Sprinkle the eggplant cubes with salt (about 1 tsp).
  • Set both aside for at least 10 min.

  • Mix all the ingredients for the paste in a bowl.

  • Fry the zucchini and onions in a large pan.
  • Add the paste and keep frying until nicely browned.
  • Deglaze with coconut milk & set the pan aside.

  • First rinse the rice in a sieve under running water.
  • Bring the rice to a boil in a pot with 1.5 times the amount of water and simmer for 3 min (for basmati rice).
  • Then set the pot aside.

  • Take the tofu out of the kitchen towel and cut it into thumb-sized cubes.
  • In a bowl, toss the tofu with garam masala and cornstarch.
  • In a (second) pan, fry the cubes until golden brown and crispy.
  • Pour off the water released by the eggplant and fry the eggplant together with the tofu cubes.

  • Combine all the ingredients (except the green topping) in one pan and let them sit briefly.
  • If you'd like more "sauce", add a little more coconut milk and/or water.
  • Fluff up the rice with a fork and serve with the topping (e.g. cilantro).

Tips

Better use a large pan:

  • In the last step, all the ingredients are combined in the pan. Even a large pan can quickly become "too small". For more than 3 or 4 people, I use a large pot or go straight for a big roasting pan👍.

Meal prep:

  • This recipe can easily be reheated several times. Also: when we have guests and, for once, cooking together isn't the focus😉, I like to make it during the day and just reheat it before serving. That way the spices have extra time to develop🤤.

Super leckeres Gerich, welches wir zukünftig öfter kochen werden! Wir haben diesmal anstatt Zuccini, eine Paprika verwendet, da wir keine Zuccini mehr hatten. Da haftet die Paste zwar nicht so gut dran, war aber trotzdem unschlagbar gut. Vielen Dank :-)
