For the bowl
Peanut sauce
In season in Germany right now
(a) and (b) are two different tofu options for this recipe:
- (a) is the quick option: marinated or smoked tofu from the supermarket. Simply cut it into cubes and you're done.
- (b) is my favorite. You'll find the recipe on my YouTube channel (link, in German).
Prepare the ingredients:
Bowl:
- Dice the red cabbage, bell pepper and onions.
- Slice the mushrooms.
- If you're using fresh spinach, cut it into bite-sized pieces.
- Thinly slice the garlic clove for the spinach mix.
- If you're using ready-marinated tofu, simply cut it into bite-sized cubes. Alternatively, you'll find a tasty recipe for savory marinated tofu cubes on Instagram or on my YouTube channel (link, in German).
Peanut sauce:
- Just peel the garlic cloves and the ginger.
- Squeeze the lime.
- Cook the rice in twice the amount of water for 5 minutes, then let it steam for another 5 minutes.
All ingredients for the peanut sauce (see above).
- Blend all the ingredients for the peanut sauce in a blender or with an immersion blender.
- You can adjust the consistency with more water (thinner) or more peanut butter (thicker).
- Fry the chopped onions.
- As soon as the onions are translucent, add the garlic.
- As soon as the garlic turns golden, add the spinach.
- Season with nutmeg, salt & pepper.
Assembling the bowl:
- Fluff up the rice with a fork and heap a portion of rice in the middle of the bowl.
- Arrange all the prepared ingredients in a circle around the rice.
Tips
About the ingredients:
Wakame seaweed:
- You can find it dried online, or - really tasty and ready to eat - in some supermarkets that have an Asian fresh food counter.
#MealPrep:
- Whenever I make this vegan bowl, I make a double batch right away and pack the second bowl into a container with a lid for the next day.
