Summer rolls
Peanut sauce

Press the tofu (wrap it in a kitchen towel & weigh it down for 10 min). Then cut it into strips.

Cut the vegetables into long, thin strips.

Squeeze the lime.

Press the garlic and grate the ginger.
Whisk all the ingredients together.

Tip: If you like the sauce a little thinner, add some extra coconut milk or water.

Brush the tofu with lime juice, then with sambal oelek.

Plate 1: mix the coconut milk and flour.

Plate 2: desiccated coconut.

Roll the tofu sticks first on plate 1, then on plate 2.

Fry the tofu sticks until golden brown on all sides.

Cook the rice noodles according to the package instructions.

In a bowl, toss the noodles with the peanut oil so they don't stick together.
- Have all the ingredients for the filling ready and place a shallow bowl of water next to them.
- Dip the rice paper in the water bath for 10 sec.
- Place the ingredients in the middle of the damp rice paper.
- Fold over the left and right sides.
- Fold over the bottom edge of the rice paper.
- Hold the filling in place with your fingers and roll it up.
Tips
- Summer rolls are great to bring along to a party or barbecue.
- Dinner-table highlight: put all the prepared ingredients on the table so everyone can make their own summer roll.

- Summer rolls stay fresh and crunchy in the fridge for a few days.
Also worth knowing:
Depending on the size of your rice paper sheets, it makes sense to cut the tofu into strips along the "long" or the "short" side. That way the tofu stick is exactly as long as the summer roll, which gives it more stability.
