Preparation:

  • Slice the tofu.
  • Cut the vegetables into bite-sized pieces.
  • Cut the chili into thin rings.
  • Strip the leaves from the stems. If you like, you can finely chop the mild part of the stem and cook it along with everything else.

Tofu:

  • Fry the tofu in a heat-stable fat (e.g. coconut oil) and deglaze with shiitake mushroom sauce.
  • Then cut it into bite-sized cubes.

Rice:

  • First rinse the rice in a sieve under running water.
  • Bring the rice to a boil in a pot with 1.5 times the amount of water and simmer for 3 min.
  • Then set the pot aside.

Coconut cream

  • Bring the coconut cream to a boil (until the coconut oil separates from the cream).

Tip: If you don't have coconut cream, use regular coconut milk and let it reduce after stirring in the curry paste.

  • Add the coconut milk and stir in the curry paste, palm sugar and soy sauce.

  • Add the tofu and vegetables.

  • Simmer for 3 minutes.

  • Turn off the stove.

  • Add the ingredients for this step and let everything sit for 5 minutes.

  • Finally, take the lime leaves out again.

  • Fluff up the rice with a fork and serve it with the curry and the tofu.

Tips

About the ingredients:

A Thai curry only becomes unmistakably delicious with the right ingredients:

  • Curry paste: The curry paste probably has the biggest influence on the flavor. I find many supermarket pastes rather boring in taste. I've had very good results with the paste from Cock Brand, though. You can also make the paste yourself.
  • Tofu: Anyone who has eaten a tofu dish at an Asian restaurant knows the difference between fresh and packaged tofu. Fresh tofu has a much softer texture but can still be fried or deep-fried really well. Highly recommended!
  • Don't confuse coconut cream with cream of coconut - that's the sweetened version for piña coladas.

Addendum on coconut cream: Avoid products from Aroy-D, as this company exploits monkeys to pick coconuts. When buying coconut milk products, make sure they're not produced with the help of trained monkeys.
