Making the toppings:

In a large bowl, first toss the chickpeas and bread with the paprika, then with the oil.

Spread on a baking sheet or in a baking dish. (400 °F / 200 °C conventional, top and bottom heat, 30 min.)

Turn once after 15 minutes.

Fry the onions in a pot until translucent.

Add the garlic and tomato paste and fry briefly (about 2 minutes).

Deglaze with the tomatoes, vegetable broth and coconut milk. Season with the Italian herbs, paprika, nutritional yeast and sugar.

Simmer for 15 minutes.

Blend the soup together with the cashews and the basil in a blender or with an immersion blender.

Then bring it to a boil once more.
Tips
About the ingredients:
- You can cook the tomato stems (the green vine) along with the soup (take them out again before blending). They give the soup a lot of flavor.
Also worth knowing:
- If you like your tomato soup chunkier, just blend a small part of the soup with the cashews and then stir it back into the unblended rest.
