  • Cut off the top with a knife and score the fruit as shown in the picture.
  • Remove the "cube" in the middle.
  • Break the pomegranate open in a bowl of water and push out the seeds.

  • Blend half of the seeds in a blender. Set the remaining seeds aside.

  • Whip the aquafaba with a hand mixer until foamy.

  • Bring the oat milk, vanilla sugar and salt to a boil. Then gradually add the semolina while stirring constantly with a whisk.
  • Fold in the whipped aquafaba and a quarter of the pomegranate seeds.

To serve

  • Carefully divide the semolina pudding between dessert bowls.
  • Scatter the remaining quarter of the pomegranate seeds over the pudding (see also the video below).
  • Top with the purée from step 2.
  • Serve right away or chill.

Tips

About the ingredients:

Aquafaba:

  • Aquafaba is a pretty word for chickpea water.
  • It whips up almost like egg whites. Once folded into the semolina pudding, it doesn't taste of anything.
