- Sift the flour and baking powder into a large bowl.
Tip: Admittedly, sifting the flour sounds a bit odd at first. But it helps the dry ingredients combine quickly with the wet ones later. That way you only need to stir the batter briefly - which is important for getting really fluffy pancakes.
- Now add all the other dry ingredients.
- Add all the wet ingredients (except the sparkling water) and stir briefly with a fork.
Tip: It's completely fine if small lumps remain in the batter. They disappear while cooking. If, on the other hand, you stir the batter too much, the pancakes won't be fluffy.
- Finally, fold in the blueberries and the sparkling water. Again: as briefly as possible.
- Heat a neutral-tasting oil (e.g. canola oil) in a pan. Pour the batter into the pan and fry on both sides.
- Dust the pancakes with powdered sugar before eating.
Tip: Sift the powdered sugar to get rid of any lumps.
Tips
#cheap_vegan:
- In this recipe I used apple juice as part of the liquid. It gives the batter a mild, fruity note. But if you're only cooking for two and want to keep it really cheap, you can easily leave the apple juice out and make up the amount with soy milk and sparkling water instead. That way you don't have to open a whole bottle of apple juice for such a small amount.
- Instead of blueberries, you can use apples as a cheaper alternative. They taste at least as good and are very healthy too.
#plasticfree:
- The usual packets of vanilla sugar are often coated with plastic. Instead, you can easily make your own vanilla sugar from a vanilla bean and sugar, which usually come in plastic-free packaging.
#health:
- For frying the pancakes I prefer canola oil to sunflower oil, because canola oil's ratio of omega-3 to omega-6 is much better for your health.
- Update 2023: Because the coating of Teflon pans is not entirely harmless for the environment and for people (keyword: PFAS), I've banished my Teflon pans and replaced them with stainless steel and cast iron pans. I especially love frying in my stainless steel pan, because it has really good non-stick properties. My pancakes always turn out perfectly😉.

Sehr gutes Grundrezept für Pfannkuchen! Ich habe anstatt Agavendicksaft, Ahornsirup verwendet, weil wir es noch da hatten. Mit den Blaubeeren ist geschmacklich wunderbar ausgeglichen. Jetzt gibt es jeden Sonntag Pfannkuchen von deinem Rezept! Danke :-)
