To be honest: vegan barbecuing was a big hurdle for me. For decades it was the classic "piece of meat, a bit of salad plus baguette", with a few tasty sauces. Done. I found it hard to imagine that a barbecue could be delicious without meat. But - to my delight - I now enjoy barbecuing more than ever! It's more colorful, more varied, and honestly I like the taste much better.
Besides the great flavor, it's especially important to me that everything is quick to prepare. When the weather is nice, I'd rather be outside in the fresh air than stuck in the kitchen. Luckily these skewers are quick to make, which is why they end up on my plate almost every time. Even a "spontaneous" barbecue in the park works perfectly with skewers: marinate the chopped vegetables and thread them onto skewers on site. If it needs to be even quicker, here's what I do: put the marinade in a large container, pack the skewers and buy the vegetables on the way to the park. To keep things especially simple, I stick to one or two kinds of vegetables that are easy to cut - or don't need cutting at all, e.g. mushrooms and zucchini.
Are they filling? Of course! The mix of fresh vegetables and protein-rich tofu is filling, varied and nourishing. I often have some flatbread with hummus on the side. Tip: you can also make great sandwiches out of it😉.

- Press the tofu: wrap it in a kitchen towel and weigh it down for 10 min.
- Cut all the ingredients into bite-sized pieces.
- Toss the vegetables and tofu with olive oil and the herbs in a large bowl.
- Season with salt and pepper.
- Thread the vegetables and tofu onto skewers and grill, turning occasionally, until nicely charred.
Tips
About the ingredients:
- Mixed vegetables: Besides classics like bell peppers and zucchini, onions, cherry tomatoes, eggplant or corn on the cob work well too (#leftovers). There are no limits to your creativity when choosing vegetables and spices, so you can create your very own unique skewers.
- Tofu: I prefer ready-marinated tofu, since it saves a step. You'll find it in well-stocked supermarkets.
- Herb mix: Herbes de Provence or Italian herbs always taste great. But it's worth trying other herb mixes too. I often use a feta seasoning, which takes these vegan skewers to a whole new level.

Mushrooms: King oyster mushrooms are amazing! They're special not only in looks but also in taste. With one drawback: unfortunately they're not exactly cheap. If you're on a budget, go for regular button mushrooms instead.
