  • Pit the dates and quarter them.

  • Melt the chocolate in a water bath.

Tip: If you don't have a melting bowl, you can place a bowl or small pot inside the pot of water

  • Blend all the ingredients in a blender until smooth.

Tips

About the ingredients:

Seeds of a vanilla bean:

  • An alternative is vanilla sugar. I use one teaspoon per 400 g (14 oz) of silken tofu.

Where to find silken tofu

  • Unfortunately, silken tofu can still be hard to find in stores - especially in rural areas.
  • Your chances are good at organic food stores.
  • With a bit of luck, you can also find silken tofu at drugstores or in well-stocked supermarkets.
  • If all else fails, order it online...

Also worth knowing:

This trick makes the mousse even better:

  • Grate half of the chocolate with a sharp knife or a kitchen grater. Set aside 1 tsp of chocolate shavings per person as a topping. Fold the rest into the mixture after blending. That gives the chocolate mousse a unique texture.
